Castles in the Sky Bottle 750 ml

A cider that floats somewhere between fruit and feeling.

This small-batch cider is made from Burré de Anjou pears, wild-fermented on Pinot Noir pomace from our neighbours at Pamplemousse Jus Natural Winery in Summerland. It spent one month on the skins before aging in neutral oak for six, drawing colour, texture, and a gentle grip from the grape.

The result is dry, lightly tannic, and quietly aromatic - balancing the softness of pear with the structure of red wine. A cider for dusk-lit dinners, curious palates, and slow conversations.

Unfiltered. Wild. Unexpected.
