This cider begins in our Summerland orchard, where bittersweet and sharp cider apples are handpicked at peak ripeness. Fermented with wild yeasts and bottled before fermentation is complete, Theory and Practice finishes in-bottle, capturing its natural sparkle the traditional way.
Unfiltered and bone dry, with fine bubbles and bright acidity. Expect notes of orchard fruit, subtle tannin, and a wild edge that speaks to the process. Each bottle is a little different - alive, evolving, and a true expression of the fruit and ferment.
No added sulphites. No fining. No shortcuts.
Just apples, time, and a little leap of faith.
